Appearance
The deep cherry red colour is entirely natural—drawn from the Ontario Black Cherries we dehydrate in house. Their rich hue and subtle sweetness infuse the spirit with a distinctive visual and flavour signature.

Nose
This spirit opens with bold yet clean aromatics: rich molasses and dark brown sugar lead the way, balanced by a touch of overripe banana and tropical fruit—classic markers of molasses-based rum. Subtle layers of caramel, a trace of vanilla, and a whisper of cherry round out the profile, offering a nose that is both familiar and full of intrigue.

Palate
Smooth and remarkably crisp for an unaged rum, the palate leads with deep molasses and restrained sweetness. Flavours unfold with toffee, brown sugar, and a thread of cocoa, while undertones of green banana and black pepper add complexity and character. The result is a beautifully balanced spirit that feels crafted, not rushed.

Finish
