Appearance
Deep amber with golden hues that catch the light—evidence of time spent in Caribbean rum casks. Legs are slow and elegant, hinting at a rich, structured spirit.
Nose
Golden Demerara sugar and toasted oak come through first, warm and welcoming. Ripe plantain, molasses, and vanilla bean follow, grounded by the signature spice of 100% Canadian rye—cinnamon bark, cracked pepper, and a whisper of tropical fruit and caramelized banana foster.
Palate
The first sip is bold—peppery rye leads with confidence, then gracefully gives way to the rum cask’s influence: think rum-raisin, brown butter, and warming baking spices like clove and allspice. Layers of dried pineapple and candied orange peel lift the profile. Rich and mouthcoating, the texture remains dry and structured—true to our grain-first approach.
Finish
