Nose
The spirit presents a robust yet clean profile on the nose, with rich aromas of molasses and dark brown sugar immediately apparent. There’s a hint of overripe banana and tropical fruit, typical of rum distilled from molasses, alongside subtle notes of caramel and faint vanilla. A trace of minerality and a slight earthiness lingers in the background, balancing the sweetness with a raw, unrefined character.
Palate
The first sip reveals a surprisingly smooth and crisp texture for an unaged rum, with molasses flavours at the forefront. There’s a noticeable sweetness, but it’s restrained and well-integrated, offering hints of toffee and brown sugar without overwhelming the palate. As the flavour evolves, subtler notes of green banana, cocoa, and a touch of black pepper spice emerge. The underlying earthiness and minerality from the blackstrap molasses add complexity to the spirit, preventing it from feeling too sweet or cloying.
Finish
The rich molasses notes linger, accompanied by a soft hint of spice and a faint trace of smoky caramel, giving way to a dry, crisp end.
